Nachos are fun because you can share them with others and they make a great appetizer, side dish or even main meal! We love cooking nachos over the campfire in our Lodge Cast Iron Skillet. We love this dish because it is a super easy camping recipe to prepare and you can make it in one skillet. That makes cleanup really easy. Also, you can use whatever vegetables you have on hand, which makes it versatile, perfect for RV cooking.
If you like to stop at farm stands or farmer’s markets while you are on the road, this dish is a great way to utilize the fresh vegetables that you pick up locally. This recipe uses zucchini, corn, onion, and bell peppers, which work well together. Other veggies that would work well would be eggplant, squash, sweet potatoes, and cauliflower.
