One of our favorite go-to RV recipes is this delicious recipe for Campfire Nachos. What we love about nachos is that you can make them in your RV microwave, RV oven, or over the campfire. They are simple to make and taste great. 

Nachos are fun because you can share them with others and they make a great appetizer, side dish or even main meal! We love cooking nachos over the campfire in our Lodge Cast Iron Skillet. Or, you can also use a Dutch Oven if you prefer.

2. Honey Garlic Instant Pot Chicken

This healthy honey garlic chicken recipe is also easy to make in your RV! If you are new to Instant Pot cooking, you will love this meal. The Instant Pot is great for camping because it is fast, easy, and clean up is simple. 

We love the Instant Pot for cooking chicken because you can cook the frozen chicken straight from the freezer if you are pressed for time. If you are cooking frozen chicken, add 2-3 minutes to the recommended cook time listed in your recipes. 

This dish is great if you feel the need for a healthy meal. The honey and garlic flavors combine perfectly and are very tasty. Every time we make honey garlic chicken, it is a hit with adults and kids alike. You can also make the chicken and sauce ahead of time if you are meal prepping for your trip.

3. Instant Pot Beef Stew

For a hearty, delicious dish perfect for fall camping, look no further than this Instant Pot Beef Stew. This classic dish is made even better thanks to the Instant Pot! The recipe can be tweaked to prepare the stew in a slow cooker as well. Beef stew is the perfect meal if you want to have the comforts of home on your road trip.

The best part about this meal is that it works well for folks with dietary concerns. By swapping the white potatoes for sweet potatoes, you can make the meal Paleo-friendly. You can also take out the peas to make it great for those following the Whole30. It is also dairy and gluten-free.

4. Fiery Campfire Veggies – Is There an Easier Camping Recipe?

If for a healthy campfire dish or side, check out these fiery campfire veggies. These vegetables are great tasting and good for you. We love this dish because it is a super easy camping recipe to prepare and you can make it in one skillet. That makes cleanup really easy. Also, you can use whatever vegetables you have on hand, which makes it versatile, perfect for RV cooking. 

If you like to stop at farm stands or farmer’s markets while you are on the road, this dish is a great way to utilize the fresh vegetables that you pick up locally. This recipe uses zucchini, corn, onion, and bell peppers, which work well together. Other veggies that would work well would be eggplant, squash, sweet potatoes, and cauliflower. 

Preparing this meal is simple. Chop up your vegetables, heat the grill, and your work is pretty much done. We love using our Lodge Cast Iron Skillet, which works well over the fire and is easy to clean. The veggies cook quickly, so don’t leave them unattended.

Another campfire favorite are these delicious, tender campfire potatoes. With just a few simple ingredients, you will have a fantastic side dish that will quickly be a family favorite. 

The key to this recipe is using Yukon Gold potatoes. Their size and flavor are perfect for the campfire and crisp up perfectly in foil packets. With a few simple ingredients- salt, olive oil, garlic, thyme, and rosemary- these potatoes become really flavorful. 

Another great thing that makes this a very easy camping recipe is that you prepare the potatoes in foil packets. Using the foil packets make cooking and cleanup very easy! The foil packets can be stored in the refrigerator for up to 2 days, which makes them great if you are meal planning or prepping ahead of time.

The potatoes will cook quickly over your fire. Be sure to open the packets carefully as hot steam will be released. After they cool down a bit, they are ready to eat. Whether you are full-timing or camping for the weekend, no one wants to spend a lot of time preparing dinner. This One Pot Southwest Pasta is another favorite because it takes less than 30 minutes to make and uses just one pot. 

The pasta is a great vegetarian meal that has an excellent southwest flavor. The Rotel spices it up, and you can even put your own spin on it with additional southwest spices if you like.

7. Instant Pot Black Beans

Some of our favorite Instant Pot easy camping recipes are simple and tasty side dishes. We love these easy, instant pot black beans. With beans, the sky is the limit! They can be used as a side dish, or you can prepare them ahead of time to use as filling for tacos, quesadillas, or burritos during the week. You can also turn them into an entrée by adding chicken, beef, or veggies. 

This recipe is excellent on its own, and you can add pretty much anything to the basic ingredients to put your own spin on it. Adding spices, herbs, or your favorite veggie is a fun way to mix it up. 

Make sure to rinse the beans before cooking and soak them in water for up to 24 hours before cooking. Soaking the beans helps the flavor and makes the beans easier to digest. Once your beans are done, make sure you have plenty of toppings handy such as sour cream, cheese, scallions, or bacon crumbles.

This breakfast burrito is a simple, quick breakfast for those days when you want to get an early start on your adventures. The burritos are easy to prepare the night before. They also cook quickly over the flames of your grill or campfire. In as little as 15 to 20 minutes of cook time, you can have a tasty, filling, homemade breakfast at your campsite.

A delicious burrito can be prepared with as few as two or three ingredients. Eggs, sausage or bacon, and cheese make an excellent basic burrito. You can spice up your burrito with onions, peppers, paprika, or even some cayenne pepper or hot sauce.

9. Dutch Oven Apple Cobbler 

We love this apple cobbler recipe that is perfect for fall camping. If you’ve got a campfire going, then you can use the embers from the fire, or you can use charcoal. This Dutch Oven oven recipe is a quick, simple, and easy camping recipe that is sure to be a favorite.

If you are fall camping, pick up some apples at a local orchard or farm stand. Grab some ice cream as well because you know you want it! These No-Bake Nutella S’Mores Granola Bars aren’t just for kids! Adults will love munching on these yummy, homemade granola bars, as well.
